Taurasi is the great red of Campania, made from Aglianico grown in the hills of Irpinia inland from Naples, and it is one of Southern Italy's most age-worthy wines. Riserva bottlings get extra aging before release. Look for black cherry, plum, tar, leather and dried herbs over firm, serious tannins and bright acidity. Tenute Capaldo's Gulielmus, 2018 vintage. Decant for an hour or two. Serve with braised lamb, ragù Napoletano, or aged pecorino.
