Il Carbonaione is 100 percent Sangiovese from Poggio Scalette, the Fiore family estate in the upper Greve valley of Chianti Classico. The vines are old and the hillside high, giving a Sangiovese of real depth. Expect sour cherry, violet, leather, and spice with firm tannins and lively acidity. Poggio Scalette, 2021 vintage, labeled Alta Valle della Greve. Decant for an hour. Serve with bistecca, porcini pasta, or aged pecorino.
