Podere Forte is a biodynamic estate in Tuscany's Val d'Orcia, just south of Montalcino, and Petrucci Anfiteatro is a single-vineyard Sangiovese named for its amphitheater-shaped slope. With some bottle age, expect dark cherry, dried rose, tobacco, leather and earthy spice, with fine but firm tannins and bright acidity. Podere Forte, 2015 vintage. Decant for an hour and serve in large glasses. Pair with bistecca alla fiorentina, pappardelle with wild boar, or aged pecorino.
