Carricante is the white grape of Mount Etna in Sicily, and on the volcano's high, cool slopes it makes crisp, mineral whites that are often compared to Chablis or Riesling. Pietradolce works from the north side of Etna. Expect lemon, green apple, white flowers and a saline, smoky mineral finish, with bright acidity. Pietradolce, 2024 vintage. Serve chilled. Pair with raw oysters, grilled swordfish, or spaghetti with clams.
