Saperavi is Georgia's signature red grape, one of the few in the world with red flesh as well as red skin, which is why its wines are so deeply colored. Expect blackberry, plum, and a hint of spice, with lively acidity and a sturdy frame. Georgian Royal Wine bottles it as a varietal. Serve lightly cool, around 60 degrees. Pair it with grilled pork skewers, khachapuri, or lamb stew.
