Idda is the Etna project of Angelo Gaja and local grower Alberto Graci, and the name means she in Sicilian dialect, a nod to the volcano. The Bianco is Carricante from high-elevation vineyards on volcanic soil. Lemon, white flowers, flint and a saline finish with lively acidity. Gaja and Graci, 2023 vintage. Serve chilled. Excellent with crudo, grilled octopus, or spaghetti with bottarga.
