The Langhe hills southwest of Alba produce Barolo, a wine required to spend at least three years maturing before release. Aromatically it leans floral and red-fruited; structurally it is one of the most tannic wines in the world. Piedmont sits at the foot of the Alps, and its cool autumns are what allow Nebbiolo to hang late into October. This is the 2022 from Ceretto. Decant at least ninety minutes ahead, or cellar it. Classic with braised beef, truffle, risotto, and aged cheese.
