By law a Brunello is 100% Sangiovese and cannot be sold until its fifth year after harvest, which is why even young bottles arrive already softened. The result is a wine of real structure: red fruit, savory herbs, and tannins that need either air or age. Tuscan hillsides, poor soils and a long dry summer are the conditions Sangiovese needs to ripen properly. Bottled by Biondi-Santi from the 1988 harvest. Decant an hour ahead. Serve with bistecca, wild boar ragù, or aged pecorino.
