Champagne earns its texture from a second fermentation in the bottle followed by extended time resting on its lees. Chardonnay brings citrus and precision, Pinot Noir body, Pinot Meunier fruit; most bottles blend all three. Bottled by Marc Hebrart Special Club from the 2021 harvest. Serve cool rather than ice-cold. Works before dinner and right through it.
