Thin-skinned and fussy about site, Pinot Noir shows where it came from more clearly than almost any other grape. Strawberry, forest floor and a gentle spice, with fine tannins and lively acidity. This one comes from Les Allies Bourgogne. Serve slightly cool, around 60°F; a warm pour loses most of the detail. Serve with charcuterie, roast chicken, or soft cheeses.
