Pinot Noir carries less tannin and less color than most serious reds, and relies on texture and aroma instead. Red cherry and raspberry over an earthy, savory base, with light color that belies its complexity. Oregon's Willamette Valley sits at roughly the same latitude as Burgundy and makes Pinot Noir with a similar sensibility. This is the 2023 from Domaine Drouhin. Serve slightly cool, around 60°F; a warm pour loses most of the detail. Serve with charcuterie, roast chicken, or soft cheeses.
