Palette is a tiny Provence appellation just outside Aix-en-Provence, and Château Simone, owned by the Rougier family for generations, is its reference estate. The red is based on Grenache and Mourvèdre with a range of old local varieties. Red cherry, dried herbs, leather and a savory, Mediterranean character on a medium, fine-grained frame. Château Simone, 2022 vintage. Decant for an hour, or cellar for years. Serve with lamb with herbs de Provence, daube, or roast duck.
