Palette is a tiny appellation just outside Aix-en-Provence, and Château Simone, owned by the Rougier family for generations, is its best-known estate. The white is a blend led by Clairette with a number of other old Provençal varieties. Quince, citrus peel, beeswax, and herbs, with a textured, savory palate that gains complexity with age. Château Simone, 2023 vintage. Serve cool, not ice cold. Pair with bouillabaisse, roast chicken with herbs, or grilled fish.
