Toro, in Spain's Castilla y León, grows its own robust strain of Tempranillo called Tinta de Toro. Bodegas San Román is the family estate of Mariano García, long the winemaker at Vega Sicilia, and this is its flagship red. Blackberry, black cherry, cocoa, and spice, with a full, dense body and firm tannins. San Román, 2022 vintage. Decant for an hour or more. Pair with grilled lamb chops, roast suckling pig, or aged Manchego.
