Unlike Champagne, Prosecco ferments its second time in a pressurised tank, which keeps it fresh and fruit-driven. That method preserves the grape's pear, white flower and green-apple character instead of building bready complexity. Oregon's Willamette Valley sits at roughly the same latitude as Burgundy and makes Pinot Noir with a similar sensibility. Bottled by Adelsheim from the 2019 harvest. Best cold, and best young. Good as an aperitif, with antipasti, or in a Spritz.
