Los Chacayes is a high-elevation district of the Uco Valley in Mendoza, Argentina, and Ver Sacrum is a small producer focused on Mediterranean grapes grown there. This Garnacha is bright rather than jammy: raspberry, red plum, dried herbs and a stony, fresh finish that reflects the altitude. Serve slightly chilled, around 60°F. Pair with grilled chicken thighs, empanadas, or charred vegetables with chimichurri.
