Thick skins and small berries give Cabernet Sauvignon its color, tannin and capacity to age. Cassis and dark plum over oak-derived vanilla and toast, finishing dry and long. Bottled by St. Supéry Dollarhide from the 2016 harvest. Serve at 62°F, decanted. The classic pairing is a well-marbled steak.
