Thick skins and small berries give Cabernet Sauvignon its color, tannin and capacity to age. Cassis and dark plum over oak-derived vanilla and toast, finishing dry and long. Sonoma is roughly twice Napa's size and considerably more diverse, running from the chilly coast to warm inland valleys. This one comes from Simi. Best with air — pour it early and let it stretch out. Made for ribeye, short ribs, and roast lamb.
