Monastrell, known in France as Mourvèdre, is the signature red grape of Spain's southeast, and Bodegas Sierra Salinas grows it in the high, dry country around Villena in the Alicante DO. Mo is the estate's approachable bottling: ripe blackberry and plum, a savory, earthy edge, and soft tannins. Open it for a weeknight and serve lightly cool. Try it with grilled chorizo, lamb burgers, or a pan of paella with sausage.
