Monte Bello is Ridge's great Cabernet Sauvignon-based blend from a ridgetop vineyard in the Santa Cruz Mountains, and it was one of the California wines in the 1976 Paris tasting. It is built for age: cassis, black cherry, graphite, cedar and a mineral backbone, with more restraint than most Napa Cabernet. Ridge Vineyards, 2020 vintage. Young bottles want a long decant; patient owners can cellar it for decades. Serve with dry-aged ribeye, roast leg of lamb, or duck breast.
