Bierzo, in the northwest corner of Castilla y León, is the heartland of Mencía, a grape that makes fragrant, mid-weight reds on slate and clay soils. Raúl Pérez is one of Spain's most influential winemakers, and Valtuille is his home village, with some of Bierzo's oldest vines.
