Pernod is a French anise spirit with roots going back to the early 1800s, flavored with star anise and botanicals and closely related to pastis. It tastes of licorice, fennel and sweet herbs. The classic way to drink it is diluted with about five parts cold water over ice, which turns it cloudy. It is also useful for rinsing a glass for a Sazerac or adding a splash to seafood dishes.
