Cognac is twice-distilled in copper pot stills and aged in French oak, in a strictly defined region north of Bordeaux. VS, VSOP and XO denote minimum ages, and the differences between them are considerable. Park is the name on the bottle. Serve at room temperature in a tulip glass — never warmed over a flame. Serve at the end of the meal.
