Paso Robles has become one of California's centers for Rhône grapes, and Halter Ranch farms a large estate in the cooler Adelaida District on the west side. Côtes de Paso is its Southern Rhône-style blend of Grenache, Mourvèdre and Syrah: raspberry, black cherry, pepper, dried herbs and soft, round tannins. Halter Ranch, 2021 vintage. Serve slightly cool. Pair with grilled lamb, pulled pork, or roast vegetables.
