Tequila must be made from blue Weber agave grown in designated regions of Mexico, chiefly Jalisco. Blanco shows the agave directly; reposado and añejo trade some of that for barrel character. Sip it neat at room temperature; the salt-and-lime ritual exists to hide bad tequila. Pairs with citrus, chili, and grilled food.
