Riesling has the highest acidity of any major white grape, which is why it ages for decades. Low alcohol and racing acidity, with the sweetness (if any) held in balance. This one comes from Giesen Dealcoholized. Serve well chilled. Pairs with Thai and Sichuan cooking, and with charcuterie.
