The Upper Galilee in northern Israel is the country's coolest, highest wine region, and Galil Mountain farms vineyards there near the Lebanese border. Yiron is the winery's flagship red, a Bordeaux-style blend led by Cabernet Sauvignon and Merlot: blackcurrant, cherry, cedar and a touch of Mediterranean herb over medium-firm tannins.
