Vajasindi is Duca di Salaparuta's estate on the northern slopes of Mount Etna, and Lavico is its Nerello Mascalese, named for the volcanic soils. It is a medium-bodied, perfumed red: red cherry, raspberry, dried flowers, a smoky mineral streak and fresh acidity. Duca di Salaparuta, 2022 vintage. Serve slightly cool. Pair with grilled tuna, caponata, or roast pork with fennel.
