Picpoul de Pinet is a Languedoc white made from the Picpoul grape near the Étang de Thau, the lagoon famous for its oyster beds. Domaine Félines Jourdan's version is crisp and bright: lemon, green apple, a little white flower and a salty, refreshing finish. Serve well chilled. It is the classic partner for oysters, and also works with steamed mussels or grilled shrimp.
