Madiran, in southwest France, is home to Tannat, a grape with some of the most powerful tannins in the wine world, often softened with a portion of Cabernet Franc. Château Peyros's Tradition bottling is dark and rustic in a good way: blackberry, plum, licorice and earth, with a firm, grippy finish. Decant for 30 minutes. Pair with duck confit, cassoulet, or grilled steak.
