Pera-Manca is one of Portugal's most prestigious reds, made by the Fundação Eugénio de Almeida at Cartuxa, near Évora in the Alentejo, and released only in vintages judged good enough. It is traditionally a blend of Aragonez and Trincadeira. Black plum, dried herbs, leather, and spice, with a deep, dense core and firm but refined tannins. Cartuxa, 2018 vintage. Decant for an hour or more. Serve with roast lamb, black pork, or aged sheep's cheese.
