Castello di Cacchiano is a historic estate in Gaiole, in the Chianti Classico hills, owned by the Ricasoli-Firidolfi family. Fonte Merlano is one of its Toscana IGT reds, bottled outside the Chianti rules. Look for ripe plum and dark cherry, some earth and herb, and a smooth, medium-full body. Cacchiano, 2020 vintage. Open it 30 minutes ahead and serve slightly cool. Try it with roast pork loin, porcini pasta, or grilled sausages.
