Arcanum comes from Tenuta di Arceno, an estate in the southern reaches of Chianti Classico, but it is not Sangiovese: this is a Bordeaux-style Toscana IGT built mostly on Cabernet Franc. Dark cherry, cassis, graphite, and savory herbs, with the softer, more integrated texture that a dozen years of age brings. Arceno, 2013 vintage. Stand it upright a day ahead and decant gently off any sediment. Serve with roast lamb, grilled ribeye, or aged Parmigiano.
