Solaia comes from a south-facing slope beside Tignanello on the Antinori family's estate in Chianti Classico, and it is Cabernet Sauvignon-led, with Sangiovese and Cabernet Franc. It is one of Italy's most sought-after reds: cassis, black cherry, graphite, cedar and Mediterranean herbs, dense and precise, with long, fine tannins. Antinori, 2021 vintage. Decant for a couple of hours, or cellar it for well over a decade. Serve with dry-aged beef, rack of lamb, or truffled dishes.
